Jerusalem artichoke

Also called the wonder of the earth. Juicy, crunchy, sweet and with a slightly nutty flavor. To some, its consistency resembles coconut. It can be eaten fresh, dried, or cooked. In our family, they are most often used fresh as a snack, dried as chips, and in powder form added to a variety of meals - in cocktails, salads, sweet dishes, and others.

Contains vitamins C and B. Jerusalem artichokes contain more potassium, iron and zinc than potatoes, beets and carrots. They contain a large amount of inulin - one of the most necessary substances for the body, which improves the functioning of the intestinal tract, as it stimulates the growth of bifiobacteria, stimulates metabolism, fat metabolism, reduces blood cholesterol levels and improves calcium absorption, thereby reducing the risk of osteoporosis. Inulin removes toxins from the body, neutralizes free radicals and promotes the return of bile from the liver to the duodenum. If Jerusalem artichoke is used for a long time, blood sugar levels decrease, because Inulin promotes the breakdown of glucose and its elimination from the body, therefore the root crop is especially recommended for those suffering from diabetes. Jerusalem artichoke juice, which is prepared from tubers, treats not only type 2 diabetes, but also anemia, cardiovascular diseases, and strengthens the nervous system. Jerusalem artichoke juice is also used to prevent gastrointestinal diseases and improve digestion. In case of type 1 diabetes, we recommend consulting a doctor before use.

Do not use: in cases of individual intolerance or allergy. If necessary, consult a doctor. In case of type 1 diabetes, we recommend consulting a doctor before use.

Usage:

Fresh - in salads and simply as a sweet snack.

Boiled, pan-fried, oven-baked - as a side dish to main dishes instead of potatoes, grated into pancakes, added to soups and stews, vegetable purees and stews, as a filling for oven-baked meat or added to fish, in sweet pies and cakes just like carrots.

Dried into powder - on morning porridge or muesli, in smoothies, creams, puddings.

Children who eat all kinds of vegetables enjoy eating Jerusalem artichoke fresh. Powder is a convenient way to add Jerusalem artichoke to the diet of children who eat a monotonous diet and refuse to experiment when they see a new vegetable on their plate. The powder can be easily added to pancakes, Belgian waffles, and small muffins - I think all children really eat these.
